Crossing USA trough Highway 40 (Las Vegas - Memphis) what are the best stop?

I am planing to cross USA by car, I will drive from Las Vegas to Memphis then to north carolina blue ridge parway, I wonder what would be the best stop to do, what not to miss on the way between las vegas to memphis. I have noted hoover dam, roswell, that's all - thanks for your help.
