Lope off and topline?

I am working with my friends horse for hunt seat, he knows Absolutely nothing at all about collection, headset, or going slow (he used to do contest). I got him to get on the bit when he is standing and a few steps into the walk. I was wondering how i could get him to do a lope off without running into it, track up, and keep his head down. *thanks*
